Hey, just got back from that trail we talked about. The weather was perfect, not too hot. We ended up taking the longer loop, about 8 miles. It wound through a dense part of the forest we hadn't explored before. Saw a deer grazing about fifty feet off the path. Definitely worth the early start. We packed sandwiches and ate them by the lake. The water was surprisingly clear. Next time we should bring the binoculars. I think I saw a hawk circling earlier. Let me know if you want to check out the northern trail next weekend. I heard the foliage is starting to change up there. It should be really beautiful soon. I finally tried making that mushroom risotto you sent me. It took forever to stir but it was totally worth it. The key was using good stock and making sure the pan was hot enough when I added the wine. I used a mix of cremini and shiitake mushrooms. Added a bit of truffle oil at the end. It was earthy and rich. Served it with a simple arugula salad on the side. The peppery greens balanced the creaminess really well. I will definitely be making this again. Maybe next time I will add some roasted butternut squash for a sweeter twist. Thanks again for sharing the recipe. It is definitely going into the regular rotation. Let me know if you have any other good ones. I have been trying to expand my weeknight dinner options and this one is a keeper.
