You know that pasta recipe you asked about last time we talked. I finally got around to writing it down properly. It is the one with roasted cherry tomatoes and basil that I brought to the potluck last spring. The trick is to halve the tomatoes and toss them with olive oil and a pinch of salt before roasting them at four hundred degrees for about twenty five minutes. While those are going you cook your pasta just until al dente and reserve about a cup of the starchy water before draining. Then you toss the hot pasta with the roasted tomatoes fresh basil torn by hand a bit of garlic and a generous handful of Parmesan. The reserved water helps make everything silky without needing a lot of extra oil. It comes together in under thirty minutes and tastes like summer on a plate. I usually double the recipe because leftovers are even better the next day.
